Carrabba's Italian Grill was founded by Johnny Carrabba and Damian Mandola in Houston, Texas in 1986. The restaurant features hand-prepared family recipes made from the finest ingredients and prepared to order in an exhibition kitchen. The success of Carrabba's led to the popular PBS cooking show Cucina!, starring Carrabba and Mandola, as well as a series of companion cookbooks. Green Beans with Romano Crumbs
Carrabba's Green Beans with Romano Crumbs
1 pound green beans, trimmed and cut into 2-inch lengths
2 tablespoons extra-virgin olive oil
1/2 cup Italian-style dried breadcrumbs
1/4 cup freshly grated Romano cheese
salt and freshly ground black pepper
Preheat the oven to 400 degrees. Bring a large pot of water to a boil over high heat. Add salt to taste. Add the green beans and cook just until crisp-tender and bright green, about 3 minutes. Drain in a colander and rinse under cold running water to stop the cooking. Drain well and pat dry with paper towels. Toss the green beans and oil in a large bowl. Add the breadcrumbs and Romano cheese and toss again. Season lightly with salt and pepper. Spread in a 2-quart shallow baking dish. Bake until the crumbs are golden brown, about 20 minutes. Serve hot.
