Carrabba's Italian Grill was founded by Johnny Carrabba and Damian Mandola in Houston, Texas in 1986. Broccoli with Red Peppers
SAUTEED BROCCOLI with RED PEPPERS
Carrabba's Italian Grill Restaurant Recipe
1 head broccoli, cut into florets, stems peeled and cut into 1/2 inch thick slices
1 tablespoon extra virgin olive oil
1/2 small red bell pepper, cored and cut into 2 x 1/4 inch strips
1 garlic clove, minced
kosher salt and freshly ground black pepper
Bring a large pot of water to a boil over high heat. Add salt to taste. Add the broccoli and cook until tender crisp, about 4 minutes. Drain in a colander and rinse under cold water to stop the cooking. Drain again.
Heat the oil in a large skillet over medium high heat. Stir in the garlic and cook, stirring often, until tender, about 2 minutes. Stir in the garlic and cook just until fragrant, about 15 seconds. Add the broccoli and cook, stirring occasionally, just until heated through, about 2 minutes. Season with salt and pepper. Makes 6 servings.
