Carrabba's Italian Grill was founded by Johnny Carrabba and Damian Mandola in Houston, Texas in 1986. The restaurant features hand-prepared family recipes made from the finest ingredients and prepared to order in an exhibition kitchen. The success of Carrabba's led to the popular PBS cooking show Cucina!, starring Carrabba and Mandola, as well as a series of companion cookbooks. There are currently 240 Carrabba's Italian Grill locations around the country.

Pear Gorgonzola Nut Salad

Carrabba's Italian Grill Restaurant Recipe

3 tablespoons red wine vinegar
kosher salt and freshly ground black pepper, to taste
1/2 cup hazelnut oil
1 head radicchio, cored and torn into bite size pieces
1 head frisee, torn into bite size pieces
Belgian endive, cut crosswise into 1/2 inch pieces, core removed
2 ripe pears, unpeeled, cored and cut into 1/4 inch wedges
1 cup Gorgonzola cheese, crumbled
2/3 cup hazelnuts, toasted, skinned and coarsely chopped

Whisk the vinegar, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a large salad bowl. Gradually whisk in the oil. Add all the greens and toss. Add the pears and Gorgonzola and toss gently. Sprinkle with hazelnuts. Season with salt and pepper. Serve on salad plates.
Serves 6 to 8.
