Carrabba's Restaurant Recipe
Red Wine Vinaigrette:
2 tablespoons red wine vinegar
kosher salt and freshly ground black pepper
a pinch of dried oregano
1 teaspoon chopped fresh basil
1/2 teaspoon finely chopped garlic
6 tablespoons extra virgin olive oil
2 bunches arugula leaves, washed and drained
4 radishes, washed, ends trimmed and sliced thin
1/2 cup shaved Parmesan cheese
1/4 cup toasted pine nuts
In a mixing bowl, whisk together all the vinaigrette ingredients except the olive oil. Slowly pour the olive oil while whisking until it is fully combined. And the arugula and radishes to a salad bowl and toss well with enough vinaigrette to coat evenly.
Arrange the salad on individual serving plates and top each one with shaved Parmesan cheese and pine nuts.
