Carrabba's Italian Grill was founded by Johnny Carrabba and Damian Mandola in Houston, Texas in 1986. The restaurant features hand-prepared family recipes made from the finest ingredients and prepared to order in an exhibition kitchen. The success of Carrabba's led to the popular PBS cooking show Cucina!, starring Carrabba and Mandola, as well as a series of companion cookbooks. There are currently 240 Carrabba's Italian Grill locations around the country.

Carrabba's Restaurant Recipe
4 bunches fennel bulbs only, tops and bottoms trimmed
freshly ground black pepper
1/4 cup extra virgin olive oil
1/2 cup grated Parmigiano Reggiano cheese
Preheat the oven to 350 degrees. Place the trimmed fennel in a large pot and cover with water. Bring to a boil and cook until tender, 12 to 15 minutes. Drain. Cool and slice 1/2 inch thick from root to top.
Transfer the fennel to a baking dish. Toss with olive oil, salt, pepper and cheese. Spread out in a dish and bake on the top rack until the cheese is golden brown, about 15 minutes.
