Carrabba's Italian Grill was founded by Johnny Carrabba and Damian Mandola in Houston, Texas in 1986. The restaurant features hand-prepared family recipes made from the finest ingredients and prepared to order in an exhibition kitchen. The success of Carrabba's led to the popular PBS cooking show Cucina!, starring Carrabba and Mandola, as well as a series of companion cookbooks. Chocolate Mousse

Carrabba's Restaurant Recipe

Serves 6

6 ounces semi-sweet chocolate
3 tablespoons sugar
4 eggs, separated
1/4 cup espresso
2 tablespoons brandy
2/3 cup whipping cream, chilled
1/8 teaspoon salt

Melt the chocolate  in a bowl, over simmering water.

In another bowl, beat 2 tablespoons of the sugar with the egg yolks, until the mixture is pale yellow. Mix in the melted chocolate, espresso and brandy. Whisk the cream until it is stiff, then fold it into the chocolate mixture in 3 batches.

Whip the egg whites with the salt until stiff, then folded into the chocolate mixture. Food into dessert glasses and refrigerate overnight. Topped with whipped cream and chocolate shavings, if desired.
