Carrabba's Italian Grill was founded by Johnny Carrabba and Damian Mandola in Houston, Texas in 1986. The restaurant features hand-prepared family recipes made from the finest ingredients and prepared to order in an exhibition kitchen. The success of Carrabba's led to the popular PBS cooking show Cucina!, starring Carrabba and Mandola, as well as a series of companion cookbooks. There are currently 240 Carrabba's Italian Grill locations around the country.

Escarole Salad

Carrabba's Restaurant Recipe              

Serves 4

Champagne Vinaigrette:
1 garlic clove, peeled and minced
1/4 cup champagne vinegar
2 teaspoons Dijon mustard
kosher salt
freshly ground pepper
3/4 cup extra virgin olive oil

1 head escarole, torn into large pieces
1 small bunch arugula
1/2 cup shaved Parmesan cheese

In a mixing bowl, whisk together the garlic and vinegar and let sit for 30 minutes.  And the Dijon mustard and salt and pepper to taste. Slowly whisk in the olive oil until fully combined.  Add the greens to the bowl and tossed well with the vinaigrette to coat evenly.

Arrange the salad on individual serving plates. Top with shaved Parmesan cheese.
