Carrabba's Italian Grill was founded by Johnny Carrabba and Damian Mandola in Houston, Texas in 1986. The restaurant features hand-prepared family recipes made from the finest ingredients and prepared to order in an exhibition kitchen. Marinated Eggplant and Peppers


MARINATED EGGPLANT and PEPPERS   
Carrabba's Restaurant Recipe

Serves 6-8

2 medium eggplants
4 large garlic cloves
1 medium red onion, cut into 1/2 inch thick rings
2 red bell peppers
1/4 cup loosely packed fresh mint leaves
2 tablespoons fresh oregano leaves
1/2 cup extra virgin oil oil, plus more to cook vegetables
4 tablespoons red wine vinegar
kosher salt
freshly ground black pepper
crushed red pepper

Preheat the broiler. Cut the ends off the eggplant and slice 1/2 inch thick. Do not peel.

Cut two cloves of garlic into slices and stud each slice of eggplant with a few slices of garlic.

Brush 2 sheet pans with olive oil. Brush the eggplant slices with oil on both sides and spread them out on one sheet pan. Season with salt and broil until tender, turning once. Remove and cool.

Place the onion rings on the other sheet pan and brush generously with olive oil. Seasoned with salt and broil until tender and brown. Remove from the broiler and let cool.
