Carrabba's Italian Grill was founded by Johnny Carrabba and Damian Mandola in Houston, Texas in 1986. The restaurant features hand-prepared family recipes made from the finest ingredients and prepared to order in an exhibition kitchen. The success of Carrabba's led to the popular PBS cooking show Cucina!, starring Carrabba and Mandola, as well as a series of companion cookbooks. There are currently 240 Carrabba's Italian Grill locations around the country.

Carrabba's Restaurant Recipe
2 pounds green olives, lightly crushed to break the skin
2 pounds Kalamata olives, pitted and crushed
2 1/2 cups peeled and medium diced carrots
3 cups medium diced celery
1/2 cup coarsely chopped garlic
1/2 cup chopped fresh basil
1/4 cup chopped fresh mint
2 tablespoons chopped fresh oregano
2 tablespoons freshly ground black pepper
2 cups extra virgin olive oil + 2 cups more to cover the top
1 1/2 cups red wine vinegar
Place all the ingredients in a large 1 gallon jar. Shake the jar to make sure all the ingredients are well blended. Top off the jar with extra virgin olive oil and cover.
To serve: Remove from the jar and drain the olive oil. This is great served as a side or as part of an antipasto.
