Carrabba's Italian Grill was founded by Johnny Carrabba and Damian Mandola in Houston, Texas in 1986. The restaurant features hand-prepared family recipes made from the finest ingredients and prepared to order in an exhibition kitchen. The success of Carrabba's led to the popular PBS cooking show Cucina!, starring Carrabba and Mandola, as well as a series of companion cookbooks. Roasted Radicchio Salad

Carrabba's Restaurant Recipe

Serves 4

Olive Vinaigrette:
1/4 cup balsamic vinegar
1/2 cup extra virgin olive oil
3 roasted garlic cloves  
8 green olives, pitted and roughly chopped
kosher salt and freshly ground black pepper

4 radicchio heads, halved, keeping the cores intact
1/4 cup olive oil
3 tablespoons balsamic vinegar
kosher salt and freshly ground black pepper
1 tablespoon chopped Italian parsley

Preheat the oven to 450 degrees. Lay the radicchio on a large baking sheet and drizzle with olive oil, balsamic vinegar, and salt and pepper to taste. Roast in the oven for 6 minutes, then flip and cook an additional 3 minutes.

In a mixing bowl, with together all the salad dressing ingredients. Remove the radicchio from the oven and transfer to a serving platter. Drizzle with the dressing while the radicchio is still hot. Sprinkle with chopped Italian parsley and serve warm or at room temperature.
