Carrabba's Italian Grill was founded by Johnny Carrabba and Damian Mandola in Houston, Texas in 1986. The restaurant features hand-prepared family recipes made from the finest ingredients and prepared to order in an exhibition kitchen. The success of Carrabba's led to the popular PBS cooking show Cucina!, starring Carrabba and Mandola, as well as a series of companion cookbooks. There are currently 240 Carrabba's Italian Grill locations around the country.

Sauteed Peas with Onions

Carrabba's Restaurant Recipe

Serves 4

1/4 cup extra virgin olive oil
3 tablespoons pancetta, finely chopped
15 pearl onions, blanched and peeled
3 cloves garlic, minced
1 1/2 pounds fresh or frozen peas, cooked in boiling water until tender
1/4 teaspoon fresh marjoram
2 fresh basil leaves, torn in several pieces
kosher salt
freshly ground black pepper

Heat the oil in a large skillet and saute the pancetta until the fat is rendered, then saute the pearl onions just until golden, about five minutes. And the garlic and cook 1 minute. Add the peas and seasonings. Cook 5 minutes more.
