Carrabba's Italian Grill was founded by Johnny Carrabba and Damian Mandola in Houston, Texas in 1986. The restaurant features hand-prepared family recipes made from the finest ingredients and prepared to order in an exhibition kitchen. The success of Carrabba's led to the popular PBS cooking show Cucina!, starring Carrabba and Mandola, as well as a series of companion cookbooks. Stewed Peppers

Carrabba's Restaurant Recipe

Serves 4-6

3 tablespoons extra virgin olive oil
1/2 large red onion, peeled and sliced thin
1 red bell pepper, julienne cut 1/2 inch wide
1 yellow bell pepper, julienne cut 1/2 inch wide
1 green bell pepper, julienne cut 1/2 inch wide
2 cloves garlic, peeled and crushed but left whole
3 tablespoons tomato sauce
kosher salt
freshly ground black pepper
10 fresh basil leaves, julienne cut for garnish

In a large saute pan, heat the olive oil on medium-high heat until it sizzles, about two minutes. Add the onions and cook until they start to caramelize slightly, about 4 to 5 minutes. Turn the heat down to low and add the peppers and crushed garlic cloves. Continue to cook for a few minutes until the peppers soften.

Add tomato sauce and salt and pepper to taste, and cook 15 minutes with the pan covered. Remove the lid and cook another 20 minutes until the peppers are soft and caramelized. Sprinkle on the fresh basil before serving.
