Carrabba's Italian Grill was founded by Johnny Carrabba and Damian Mandola in Houston, Texas in 1986. The restaurant features hand-prepared family recipes made from the finest ingredients and prepared to order in an exhibition kitchen. Tuscan Beef Stew

Carrabba's Restaurant Recipe

Serves 6

1/2 cup extra virgin olive oil
2 pounds chuck steak, cut into 1 1/2 inch cubes
1 yellow onion, diced
2 carrots, peeled and diced
1 stalk celery, diced
3 cloves garlic, minced
1 cup Chianti or other dry red wine
1/2 cup fresh tomatoes, eeled, seeded and chopped
6 fresh whole basil leaves
1 bay leaf
kosher salt
freshly ground black pepper
beef broth

Heat the oil in a large pot or Dutch oven. Season the meat and brown on all sides. Remove about 2 tablespoons of the fat from the pan. Lower the heat and saute the onions, carrots, celery and garlic for about 10 minutes, just until they begin to soften.

Raise the heat and stir in the wine, cooking until it has evaporated. Add the tomatoes and basil. Season with salt and pepper. Add the bay leaf and about half of the beef stock. Cover the pot and simmer gently for 2 to 3 hours, gradually adding the remaining beef stock. Season with salt and pepper.
