several sprigs of fresh mint or 1/2 cup mint leaves
1/4 cup extra-virgin olive oil
kosher salt and freshly-ground black pepper to taste
Peel the oranges, removing all the white pith beneath the skin as well. Cut the oranges into 1/2-inch rounds, removing any seeds, and place the slices on a platter.
Wash mint leaves and cut into ribbons with scissors, or tear each leaf into 2 or 3 pieces. Sprinkle the mint leaves over the orange slices. Add olive oil to small bowl and season with salt and pepper. Mix well. Pour the olive oil mixture over the oranges.
To serve: Allow oranges to marinate for 30 minutes before serving.
